Granola recipe

This time of year, I really enjoy a bowl of homemade granola and mixed berries.

Here’s my favorite granola recipe:

4 cups Quaker oats

1/2 cup raw coconut

1/2 cup chopped pecans

1 cup cashews

1/4 cup sunflower seeds (no shells)

1/4 cup flaxseed

1/2 cup honey

1/2 cup brown sugar

1/4 pound butter

1 teaspoon vanilla

1 pinch of salt

In a glass pan, add dry ingredients. Mix butter, honey, brown sugar, salt and vanilla and pour over dry ingredients. Bake for 40 minutes at 350 degrees. Every 10 minutes, remove from oven and stir the mixture so it cooks evenly.

NOTE: if you prefer almonds, walnuts, macadamia nuts, etc. feel free to add these rather than the nuts listed in the recipe. I use a different combination of nuts every time I make a batch of granola.
